Real Minero

Frequently Asked Questions

Everything you need to know before your first order.

We use exclusively wild agaves — never cultivated — that mature between 8 and 25 years. Distillation is done in clay pots, an ancestral technique mastered by only a handful of people worldwide. Every bottle carries a lot number and the master mezcalero's name.

The Mezcal Regulatory Council (CRM) certifies that the product complies with Mexico's Official Standard NOM-070-SCFI-2016. For us, certification is the minimum guarantee: it means the mezcal was lab-analyzed, the agave is as declared, and the process matches what appears on the label.

We primarily work with Espadín (Agave angustifolia), Tobalá (Agave potatorum), Cuishe (Agave karwinskii), and Madre Cuishe. Depending on the batch and season, we may produce with other wild species from the Central Valleys. Each agave brings a unique flavor profile.

NOM-070 classifies mezcal into three categories: mezcal (may use autoclaves and distillation columns), artisanal (requires manual processes and copper or clay pots), and ancestral (everything in clay, stone mill, and wild fermentation). Real Minero is ancestral or artisanal category, depending on the batch.

Neat, at room temperature, in a clay or thick-walled glass. Start on the nose: let the alcohol dissipate and let the vegetal and smoky notes emerge. Take a small sip and let it rest in your mouth. Water is not forbidden — alternate sips of mezcal with water to cleanse the palate.
